i think that bubble tea stores in the united states can be helpfully categorized into generations. while over time bubble tea chains can adapt and switch from one generation to another, more often they do not meaningfully change their core products. and so as of writing in 2026, all of these generations exist concurrently. the years listed are the time ranges where i think these generations peaked in popularity in the united states, specifically new york.

what i refer to as bubble tea includes drinks that do not necessarily contain tapioca pearls, or tea.

gen 1 (pre 2000): the first places that sold bubble tea. these are sometimes not primarily bubble tea stores, but rather restaurants or dry tea stores that happen to sell bubble tea. their menus are fairly limited, and they tend to offer some artificial tasting flavors, like almond or strawberry.

gen 2 (2000-2010): they are often of taiwanese origin. some iconic second gen bubble tea flavors are thai tea and honeydew melon. they often don’t use visible fruit chunks, rather relying on syrups to serve a wide variety of flavors. many of these serve slushes, and offer aloe as a topping.

gen 3 (2010-2015): these chains are often founded in the united states. they are normal bubble tea. their menus often lean towards milk teas as opposed to fruit. they are the last generation to mostly use plastic film cup covers that require puncturing with a straw. their menus usually have some drinks that use fresh ingredients, and some that use syrups or powders.

gen 4 (2017-2020): this is a trendy generation of bubble tea that emphasizes high quality solid ingredients. their innovations include cheese foam and brown sugar boba. chinese yogurt drinks are decidedly not bubble tea, but i think they are spiritually similar to gen 4 bubble tea.

gen 5: (2020-): these shops have sleek minimalist designs for both drinks and stores. they often offer floral flavors and focus on high quality tea. they’re mostly from mainland china.
